Of course, there's Christ's saying, "Other sheep I have that are not of this fold...." St. Paul might be included in those words.

Not that I know of but then not everything is written because there wouldn't be enough books. There were many disciples whose conversion and subsequent ministries were not mentioned either. I don't think it should make any difference if it's mentioned or not.
